I am a big fan of snacks. Especially salty ones. Especially salty ones that I can claim as somewhat healthy. So I was very excited at the opportunity to review this Yum Yum Healthy Snacks Box.

It arrived in a white box with a cute logo on the top:

Inside, the box was filled with a great variety of health snacks, mostly breakfast-y. The majority were some sort of granola bar type product, but there typically weren't more than a couple of any given flavor. There were also some fig bars and breakfast bites that I've never tried before and some of my already-favorites -- the Breakfast Biscuits and the Planters Nuts.

This Snack Box retails for $39.95 on Amazon and contains 35 individual snacks. I haven't priced it out to determine the value versus buying all of these from the grocery store, but the best part is the variety. To purchase that many different items from the store would be expensive and you'd have a lot of boxes in your pantry! The alternative is a giant box of one thing from Costco, but then you're stuck eating the same thing everyday. Variety is the spice of life, they say, and this box has it!

I'm planning on using most of these for Tom's lunches, to give him a snack for the workday. I think it would make a great gift, though, and the box is cute enough on its own.  It would be super fun as a gift for a college student (heck, I'm 31 and I'd think it's a great gift!) and would add some fun variety to kids' lunches, too.

I'm looking forward to eating some of these myself, too! It'll provide some good options for on-the-go snacking. Overall, this is a very fun box filled with lots of tasty treats -- that really aren't bad for you, either! Bonus!

I love tacos. That's no secret. But I've been branching out recently and have tried some new variations on this household favorite...including one for breakfast and one with an Asian flair! I was dreaming of a delicious Saturday morning breakfast and taking into account the ingredients I had on hand (including a green pepper that really needed to be used up) and I thought I'd do a take on heuvos rancheros.  I've done something similar before, but never recorded what I put in it!

BONUS: you can use the extra pizza sauce for the chicken parmesan above, or vise versa.

I found this recipe on Pinterest, and it sounded interesting, so I decided to try it out!  I didn't have any feta cheese on hand, so I left that out.  It was pretty good!  It's very different, so I wasn't really sure what to serve it with.

Pasta with Creamy Green Sauce

I am not sure that I can remember the exact recipe for this, but I had some leftover ricotta cheese that I mixed with spinach, olive oil and chicken broth in a food processor.  I think I seasoned it with salt and garlic, the tossed with penne pasta and some toasted pine nuts.  I liked it!  I don't think Tom was too impressed -- it was too green and too closely resembled pesto, which he doesn't like.

Lemon Chicken with Noodles & Vegetable Medley

For this dish, I dredged the chicken in some flour mixed with some Mrs. Dash, and cooked in a skillet with lots of lemon juice.  The noodles just had some butter, salt, parsley and a little squeeze of lemon juice -- yum!!  I even used a little bit of lemon in the vegetables.  All was very good.  I need to do mixed veggies like this more often.  And find more things I can serve buttered noodles with!

Goat Cheese Ravioli with Lemon Sauce

I had only tried making ravioli once before -- with the Swiss chard from my garden last year.  I found the above recipe online and thought it sounded delicious!  For some reason, I could not find arugula at the store, so I tried Frisee -- which I discovered had no flavor.  The sauce was really tasty (hello, it's butter!).  I think I'd change the filling in the ravioli next time, though.  The goat cheese was okay, but not my favorite...and I thought it needed more flavor overall.  Still, a fun cooking project!

Taco Night!!

I made these for a game night we had a couple of weeks ago.  I had never tried making a regular quiche before, let alone mini quiches.  They really weren't too hard to make and they tasted delicious!  This is definitely a keeper recipe.
